Step two: add eggs and milk or water. (note: I use milk to replace water in the recipe because milk makes the bread softer.)
Step three: add butter (note: butter must be added at the last stage.)
Step four: kneading the dough until it is smooth and put it in a mixing bowl. (note: brush a layer of oil on the bowl surface so that the dough will not stick to it.)
Step five: put the dough in a warm place and cover it with a wet towel for first rise. (note: it may take 1.5hrs to 4 hrs depending on the temperature.)
Step six: gently remove the dough from the bowl, then cut it into small pieces and roll them to become a ball.
Step seven: after the balls have rested for a couple of minutes, shape them.
Step eight: put the buns in a warm place for second rise. (note: second rise is usually quicker than first rise.)
Step nine: put the buns into the oven for 15 to 20 mins, then brush egg wash and put them back in the over for another 5 mins. (note: the buns will rise further in the oven.)
Step ten: enjoy the buns. YUM!
