Use a bench scraper or sharp knife to cut through the dough; don't pull or tear it. Do not push the dough too hard or over stretch it. If you do, you are releasing the air from the dough. Cut the dough into small equal pieces, roll them into ball shape. After they have rested for a few minutes, you can then start shaping them.
